Ingredients

  • Quiche Crust:
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold butter cubed
  • 1/4 cup ice water
  • Quiche Filling:
  • 1 cup fresh cheese Gruyere or fresh mozzarella, shredded or diced
  • 1/2 cup bacon diced
  • 1/4 cup cherry tomatoes halved
  • 4 eggs
  • 1/2 cup fresh milk
  • Salt pepper, and nutmeg

Instructions

  • Prepare the Quiche Crust:
    Mix the flour and cubed butter in a bowl. Use your fingers or a pastry cutter to blend the butter into the flour until it resembles coarse crumbs.Gradually add ice water and gently knead until the dough forms a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Prepare the Quiche Filling:
    In a large bowl, whisk together the eggs and fresh milk. Add the shredded cheese or diced cheese, diced bacon, halved cherry tomatoes, a pinch of salt, pepper, and a dash of nutmeg. Mix well.
  • Make the Mini Quiche:
    Preheat the oven to 350°F (180°C).Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut out small circles and line a mini muffin tin with the dough circles, forming mini crusts.Pour the prepared quiche filling into each crust.
  • Bake:
    Place the mini quiches in the preheated oven and bake for approximately 15-20 minutes or until the crust turns golden brown and the filling is set.
