Ingredients

  • 1 1/4 cups firmly packed piloncillo Mexican brown sugar or dark brown sugar
  • 1 1/4 cups water
  • 2 cinnamon sticks
  • 4 1/2 cups French bread cut into 1/2-inch cubes
  • 1/4 cup golden raisins
  • 1/4 cup toasted slivered almonds
  • 2 tablespoons butter cut into small pieces
  • Cooking spray
  • 3/4 cup shredded Monterey Jack cheese

Instructions

Step 1: Prepare the Syrup

  • In a saucepan, combine the piloncillo or dark brown sugar, water, and cinnamon sticks. Bring it to a boil, then lower the heat and let it simmer for about 10 minutes. Remove the cinnamon sticks and set the syrup aside.

Step 2: Prepare the Bread Mixture

  • In a large mixing bowl, combine the cubed French bread, golden raisins, toasted slivered almonds, and the small pieces of butter. Toss them together gently to mix.

Step 3: Soak the Bread Mixture

  • Drizzle the warm sugar syrup over the bread mixture, ensuring an even coating. Toss the ingredients once more to ensure everything is well soaked in the sweet syrup.

Step 4: Assemble the Capirotada

  • Transfer the soaked bread mixture into an 8-inch square baking dish coated with cooking spray.

Step 5: Add the Cheese

  • Sprinkle the shredded Monterey Jack cheese evenly over the top of the bread mixture.

  • Cover the baking dish with foil and place it in the refrigerator. Let it chill for at least 30 minutes, allowing the flavors to meld. In the meantime, preheat your oven to 350°F (175°C).
